Religieuse café


Religieuse is a French pastry made of two choux pastry cases, one larger than the other, filled with coffee custard cream. Each case is covered with a coffee fondant and they are joined decorated with piped buttercream.

the name means “nun” in French, and by most accounts this pastry takes its name from the ressemblance, however oblique, to a nun in habit.
